I attended the President's Ball two weekends ago and I just wanted to say to you, the food was amazing. The beef wellington was one of the best I have ever had and I think I am officially addicted to the apple pie - i can see how you are so sought after!



Plate Selections

Stuffed Chicken Selections:
  • Cordon Blue (Swiss Cheese & Ham) topped with mushroom demi glaze.
  • Kiev (Fresh spinach and Feta Cheese) smothered with traditional cream sauce.
  • Monterey (Baby shrimp and Jack cheese) folded together with a zesty parmesan sauce.
  • Puffed Chicken (Broccoli and cheddar) wrapped in puff pastry baked golden brown.
  • Philo and Crab (Surimi crab, fresh herbs and Swiss)
Alberta Beef Selections:
  • Peppercorn Sirloin, Top Sirloin crusted in peppercorns cooked to medium temperature smothered in red wine peppercorn perfection.
  • Prime Rib, slow roasted to perfection, topped with its own natural juices. Also available as Oscar style (topped with crab, shrimp, asparagus and hollandaise sauce)
  • Traditional Black Angus Roast Beef, We will start roasting this the day before.......no knives necessary.
  • Beef Rouladen, Tender beef slices rolled with bacon, Dijon mustard and a variety of garden vegetables slowly simmered in beef au jus.
From the Ocean:
  • Blackened Sea Bass, topped with a tangy fruit salsa
  • Salmon EnCroute, Salmon fillet wrapped in puff pastry served on top a creamy bed of baby shrimp.
  • Herbal Halibut, Marinated halibut grilled steaks served with a fresh herb lemon glaze.
  • Lobster Shells, Large shell pasta stuffed with lobster meat and cream herbed cream cheese covered with a light white sauce.
Vegetarian Options:
  • Cranberry Risotto, Baked risotto with fresh cranberries surrounded by an oyster mushroom sauce finished with fresh herbs.
  • Angel Hair Primavera, A selection of flavorful vegetables sautéed in herbed olive oil, mixed with angel hair pasta.
  • Stuffed Acorn Squash, mixed nuts, garden vegetables, blended in a zesty tomato sauce, all baked inside an acorn squash, served on rice pilaf.

All dishes will be served with your choices of starter salads or soups, choices of potato and vegetable and a dessert selection.
